Montego Bay Brownies Recipe

A favorite for children from the resort town. 
We got this recipe from a grandmother in Montego Bay.
3 squares unsweetened Jamaican chocolate
cup butter
1 tsp dried coffee
cup flour
tsp baking powder
tsp salt
2 eggs beaten
cup granulated sugar
cup brown sugar
1 tsp vanilla extract
1 cup chopped peanuts
Preheat oven to 350F.
Combine chocolate and butter in a small, heavy saucepan over very low heat.
Sprinkle coffee over chocolate mixture and allow to stand until melted.
Stir well to and let cool, then grease an 8-inch-square pan; dust with flour.
In small bowl, stir together flour, baking powder and salt to combine thoroughly
In mixer bowl, combine eggs and sugars and beat at high speed until thick.
Blend in vanilla, chocolate mixture and gradually add flour mixture, beating 
until well combined.
Stir in peanuts and spread batter in prepared pan.
Bake until edges pull away from sides of pan and centre. Do not over-bake.
Let cool in pan on a wire rack for about 10 minutes, then cut into 16 bars.
Remove from pan when cool and serve.
