Jamaican Peanut Cake Recipe

Peanuts are a strong source of stamina for many Jamaicans and this is a 
stamina cake recipe.
2 cups flour
tsp baking powder
cup vegetable oil
3 eggs
cup sugar
tsp vanilla extract
1 cup sesame seed
Preheat oven to 350 degrees. In a large bowl, sift together flour and baking powder.
Make a well in centre. Pour oil into well and stir to blend.
In mixer bowl, combine 2 of the eggs, sugar and extract.
With electric mixer, beat at high speed until mixture is thick and pale. 
Add egg mixture to flour mixture, beating until thick and well-blended.
Shape dough into 1-inch balls. In small bowl, lightly beat remaining egg.
Spread sesame seed in plate or shallow pan.
Dip each cookie into egg to coat lightly, then roll in sesame seed to 
coat completely.
Place cookies about 1 1/2 inches apart on lightly greased baking sheets.
Bake until cookies are lightly browned.
Cool on wire racks.
