Jamaican Favorite Carrot Bake Recipe

A popular choice among the Jamaican vegetarians absolutely delicious.
1 lb. carrots, peeled and coarsely chopped
1 medium potato, peeled and coarsely chopped
2 tbsp unsalted butter
1 tsp salt
tsp pepper
3 cups chicken stock
cup yoghurt
In a saucepan place carrots and potato in water to cover, and simmer until
vegetables are cooked.
Puree vegetables in a blender or food processor with butter, salt and pepper.
Return to saucepan and stir in chicken stock. Place over medium heat; 
heat through.
Serve immediately, garnished with a dollop of yoghurt and sprig of fresh 
oregano or dill.
