Jamaican Cooking Recipe
A great tasting recipe even though not a popular meat in Jamaica, lamb is popular in North Coast Hotels. 
 
INGREDIENTS
4 lb de-boned shoulder of lamb rolled and tied
tsp salt
tsp paprika
cup vegetable oil
1 tbsp Worcestershire sauce
tsp allspice
cup onion, minced
2 tbsp sugar
cup soy sauce
cup escallion chopped
  
PREPARATION
1.      Place in a blender and blend all ingredients together except oil and lamb.
2.      Use to marinate in lamb meat and then discard.
3.      Place lamb on rack in roasting pan and roast at 325 Degree F for 90 minutes basting with remaining marinate every 15 minutes.
4.      Remove cut in serving portions and serve hot.
