Jamaican Appetizer Recipe
A special goat meat appetizer popular across Jamaica.
1 lb Jamaican yam 
tsp salt
tsp black pepper
tbsp dried thyme leaves
tbsp scotch bonnet pepper diced
2 lg green bananas boiled and chopped
cup chopped carrots
cup chopped escallion
4 cups water
2 lb goat head meats
2 chochos, peeled and finely chopped
1.      Chop goat head meat finely and place in water.
2.      When it reaches a boil add all other ingredients to the pot.
3.      Reduce heat, cover, and simmer 45 to 55 minutes, or until yam, chocho and bananas are soft.
4.      Serve hot.
