Ocho Rios Pimento Cheese Recipe
lb. cheese
2 eggs, beaten
1 stick butter
1 can Jamaican pimento, already cut up
2 tbsp. sugar
cup Jamaican salad dressing 
1. Cut cheese up into bite-size chunks and put in the top of a double boiler with the butter, Jamaican pimento, and sugar.
2. When the butter begins to melt, add the beaten eggs. Keep stirring the mixture to keep the eggs from cooking too quick or you will have little chunks of eggs in the Jamaican pimento cheese.
3. You want it to be smooth. Cook the mixture until desired thickness. When it cools, add the Jamaican salad dressing.
