Negril Coconut Cake Recipe
 
INGREDIENTS:
Cake 
1 box chocolate or chocolate fudge cake mix 
Filling 
14 ounces frozen Jamaican coconut 
1 cups evaporated milk 
1 cup granulated sugar 
Icing 
4 squares unsweetened Jamaican chocolate 
cup brown sugar 
cup water 
A dash Salt 
cup butter
 
PREPARATION:
1. Bake cake as directed and split layers. Mix milk, sugar and melt. Stir until sugar is dissolved.
2. Remove from heat and stir in Jamaican coconut. Put this mixture between each split layer and on top. 
3. Make Icing. Melt Jamaican chocolate with the brown sugar; add salt, water, and butter. Simmer 3 minutes. Remove from heat.
4. Add 1 teaspoon vanilla; mix well. Put Jamaican chocolate icing on top and sides of cake.
