Jerk Chicken Wings

Jerk Chicken Wings
Great Jamaican chicken wings to go with your pizza recipes or as a great hors d’oeuvre.
1 onion chopped
½ cup scallions chopped
2 garlic cloves
½ tsp thyme crumbled
1½ tsps salt
1½ tsps ground allspice (pimento)
¼ tsp nutmeg grated
½ tsp cinnamon
¼ cup scotch bonnet pepper minced
1 tsp black pepper
6 drops Tabasco sauce
2 tablespoons soy sauce
¼ cup vegetable oil
15 chicken wings trimmed
1.      Pre pare the marinade by placing all the ingredients in a food processor or blender and puree.
2.      In a large shallow dish arrange the wings in one layer and spoon the marinade over them, rubbing it in (use rubber gloves).
3.      Let them marinate, covered & chilled, turning them once and leave them overnight.
4.      Arrange the wings in one layer on an oiled rack set over a foil-lined  roasting pan, spoon the marinade over them & bake in the upper third of a preheated 450F oven, 30-35 minutes or until they are cooked through.
