Jerk Chicken Recipe

Jerk Chicken Recipe
Jerk chicken prepared in true Ochi style
 
INGREDIENTS     
2 tbsp Juice lemon
2 tbsp Juice lime 
1 tbsp Dijon mustard
1 Scotch bonnet pepper diced
1 garlic finely chopped
1 pinch salt and black pepper
1 stalk escallion diced
tsp dried thyme leaves
4 Chicken breast halved
 
PREPARATION
1.      In a shallow dish or plastic bag, combine 3 tbsp water and all ingredients except chicken.
2.      Add chicken, coating well with marinade. Cover dish or seal bag; marinate in refrigerator 4 hours or overnight.
3.      Prepare outdoor grill or preheat broiler.
4.      Remove chicken from marinade; pour marinade into small saucepan and bring to a boil.
Grill or broil chicken 15 to 20 minutes, turning occasionally and basting frequently with marinade
