Jerk Chicken Marinade

Jerk Chicken Marinade
A great jerk marinade with ginger flavoring
cup Allspice (pimento)
2 tbsp chopped ginger
3 scotch bonnet pepper diced
1 tsp ground cinnamon
5 stalks escallions chopped
1 tbsp ground black pepper
cup chopped onions
cups vegetable oil
3 tbsp garlic chopped
cup lime juice
4 bay leaves crushed
1.      Roast the pimento berries in a dry skillet.
2.      Remove and crush them to a powder in a mortar or spice mill.
3.      Place all the ingredients in a blender or food processor and puree to make a sauce.
4.    Remove and store in the refrigerator.
