Jamaican Recipe For Jerk Sauce
A great jerk recipe with a special jerk sauce.
2 large white onions chopped
½ cup diced scotch bonnet peppers
½ cup fresh ginger, peeled
¼ cup ground allspice (pimento)
¼ cup  fresh thyme leaves
3 tsp black pepper
¾ cup white vinegar
1 cup soy sauce
4 chicken quarters
1. First prepare Doreen’s Special Jerk Sauce   
a.)    Pulverize the onions, peppers, and ginger in a blender or food processor.
b.)    Transfer the mixture to a large bowl.
c.)    Stir in the allspice, thyme, black pepper, vinegar, and soy sauce.
2.      Coat the chicken with the sauce.
3.      Cover and marinate in the refrigerator for 24 hours.
4.      Preheat the oven to 350 degrees.
5.      Place a shallow pan of boiling water on the oven floor.
6.      Put the chicken on a rack and place in a roasting pan.
7.      Roast, basting frequently with the sauce.
8.      Preheat the grill and place the chicken on it basting the chicken with more jerk sauce.
9.      Sear the chicken for 5 minutes then remove from the heat.
10.   Serve hot.
