Jamaican Fruit Cake Recipe
A great tasting Jamaican fruit cake recipe.
2 tsp vanilla
2 tsp lime juice
cup Jamaican rum
1 tbsp browning
1 lb sugar
1 lb butter
6 eggs
4 cups mixed fruits
cup bread crumbs
3 cups flour
1 tsp baking powder
tsp salt
cup chopped nuts
1. Line a baking tin with brown paper and greaseproof paper
2. Grease with shortening.
3. Mix butter, sugar, browning, vanilla and lime juice.
4. Add one egg at a time with mixed fruits, flour, bread crumbs, baking powder and salt.
5. Add the rum.
6. Pour into baking tins.
Bake at 375 Degrees F for 3 hours or until cake is done.
