Jamaican Curry Recipe

Jamaican Curry Recipe
In Coolie Town, curry is used for just about anything, including the curried ackees.
8 Ackee pods or ½ can of Ackees
¼ tsp salt
¼ tsp black pepper
4 tomatoes chopped
1 onion finely chopped
3 stalks escallion finely chopped
¾ cup coconut milk
2 tbsp margarine
¼ tsp Jamaican hot sauce
1 tbsp curry powder
1.      Boil ackees in salted water unless using canned ackees.
2.      Sauté onions, tomatoes, escallion and curry powder in butter.
3.      Add the coconut milk and bring to a mild boil then add the ackees.
4.      On a low flame continue to cook until the ackees have absorbed the curry sauce.
5.      Add black pepper and salt and let cook for another 5 minutes.
6.      Serve hot.
