Jamaican Tomato Sauce And Okra Recipe
½ pound Jamaican okra cut in chunks
2 tbsp. olive oil
¼ cup finely chopped Jamaican onion
1 clove Jamaican garlic, finely minced
2 medium Jamaican tomatoes peeled and diced
1 tbsp. Jamaican lemon juice
dash salt and pepper
1. Heat 1 tablespoon olive oil in a saucepan over medium-high heat.
2. Sauté the Jamaican okra for 3 to 5 minutes, then remove with slotted spoon to paper towels.
3. Heat the remaining tablespoon of olive oil in the saucepan. When hot, add the chopped Jamaican onion; sauté for 2 to 3 minutes.
4. Add the Jamaican garlic and sauté another 2 minutes. Add the diced Jamaican tomatoes and stir together until the mixture boils. Turn down to a simmer, add the Jamaican lemon juice, salt and pepper.
5. Simmer for 30 minutes longer.
