Jamaican Sweet Potato and Jamaican Banana Casserole Recipe
This is a very popular Jamaican sweet potato casserole recipe. 
6 medium Jamaican sweet potatoes 
2 eggs, separated 
3/4 cup mashed ripened Jamaican bananas
cup butter or margarine, softened 
teaspoon finely grated Jamaican lemon peel 
teaspoon salt
In a large saucepan cook Jamaican sweet potatoes covered, in enough boiling salted water to cover for 30 to 40 minutes or until tender; then drain.
Peel Jamaican sweet potatoes and mash. Beat in mashed ripened Jamaican banana, butter or margarine, Jamaican lemon peel, and salt.
Beat until fluffy; add egg yolks and beat well. Beat egg whites until stiff peaks form; fold into Jamaican sweet potato mixture.
Spoon Jamaican sweet potato mixture into a buttered 1 -quart casserole.
Cover and bake at 350 for 20 minutes; uncover and bake 20 to 25 minutes longer.
