Jamaican Grilled Shrimp and Mango Salad Recipe
 
INGREDIENTS
2 large firm Jamaican mangoes, peeled & shredded
3 tbsp. thinly sliced Jamaican escallions
1 large Jamaican onion diced
cup Jamaican lime juice
2 tbsp. Jamaican soy sauce
1 teaspoon sugar
1 small clove Jamaican garlic, minced
1 small Jamaican scotch bonnet pepper, minced
1 pound Jamaican shrimp
Jamaican lime slices, for garnish
 
PREPARATION
1. Combine Jamaican escallions, Jamaican onions, Jamaican lime juice, soy sauce, sugar, Jamaican garlic, and Jamaican scotch bonnet pepper in a bowl.
2. Mix in shredded Jamaican mango.
3. Shell and de-vein shrimp and rinse well; divide into 4 portions. Thread 1 portion onto a slender metal skewer.
4. Run a second skewer through shrimp to 1 inch from the first skewer, to keep them flat. Repeat with remaining shrimp.
5. Grill Jamaican shrimp on a medium hot grill, covered, for about 3 minutes on each side, or until opaque but still a bit moist in the center of thickest parts.
6. Place shrimp over the Jamaican mango salad and garnish with Jamaican lime slices.
