Jamaican Rum and Plantain Recipe
4 ripe Jamaican plantains
6 tbsp. of butter
2 tbsp. of flour
4 tbsp. of sugar
2 Jamaican oranges cut in thin slices
cup of Jamaican Appleton rum
cup of Jamaican corn syrup
1 tbsp. of Jamaican lemon juice
grated half Jamaican lemon
1. Peel the Jamaican plantains and cut them into 2-inch slices.
2. In a large frying pan, melt the butter and brown the Jamaican plantains slightly. In a bowl, mix the flour with the sugar and mix in the browned Jamaican plantains.
3. Grease a Pyrex bowl and spoon in the Jamaican plantain mix. Cover with Jamaican orange slices and rind. In a bowl, mix the Jamaican rum, the lemon juice, grated lemon and corn syrup.
4. Pour this mixture over the Jamaican plantains, orange slices and rind.
5. Bake at 350 for approximately 35 minutes, dipping the Jamaican plantains in its own juice.
