Jamaican Red Stripe Coconut Shrimp Recipe
 
INGREDIENTS
1 lb. unpeeled med. fresh shrimp
cup pancake mix
cup Jamaican Red Stripe beer
1 tbsp. Jamaican coconut milk
cup all purpose flour
1 cup Jamaican coconut flakes
Light Jamaican vegetable oil 
 
PREPARATION
1. Peel and de-vein shrimp; rinse well.
2. Combine pancake mix, Jamaican Red Stripe beer and Jamaican coconut milk and mix well.
3. Dredge shrimp in flour, shake off excess. Dip into batter then dredge coated shrimp in Jamaican coconut.
4. Heat oil in saucepan (2" to 3" deep) to 350 degrees.
5. Fry 5 to 6 shrimp at a time approximately 35 to 45 seconds on each side and golden brown. Drain on paper towel and serve
