Jamaican Port Royal Coconut Shrimp Recipe
1 lb unshelled shrimp, uncooked
1/3 cup Jamaican coconut milk, canned and sweetened
2 Tbsp Jamaican lime juice
1 Jamaican garlic clove, crushed
1 minced Jamaican scotch bonnet peppers  
1 tsp ground Jamaican cinnamon
tsp ground Jamaican black pepper
12 fresh Jamaican pineapple chunks
1. Peel and de-vein the Jamaican shrimp retaining tails; set aside. Combine Jamaican coconut milk, Jamaican lime juice, Jamaican garlic, Jamaican peppers and pour over shrimp.
2. Marinate no more than 1 hour. Thread shrimp and pineapple chunks on skewers. Broil or grill, 3 minutes per side, or until shrimp are done.
