Jamaican Pineapple and Coconut Cake Recipe
1  cup sugar 
2 eggs 
15 ounces crushed Jamaican pineapple 
2 cups flour 
teaspoon salt 
1 teaspoon baking soda
1. Mix well and pour into greased 9x13x2-inch inch pan, bake for 30 min at 350.
2. Make topping (below) while cake is baking.
1 stick butter (4 ounces) 
1 cup granulated sugar 
cup evaporated milk 
1 teaspoon vanilla 
1 cup flaked Jamaican coconut 
1. Combine butter, sugar and milk in saucepan and boil very slowly for 10 minutes.
2. Add remaining ingredients. 
3. Spread over hot Jamaican cake. Let cake and topping cool completely before slicing
