Jamaican Oven Dried Mango Recipe
1 cup sugar
2 lbs. Jamaican mangos, sliced
2 tbsp. Jamaican lime juice
3 cups Jamaican spring water
1. Mix water, Jamaican lime juice and sugar. Heat to boiling. Add Jamaican mango slices to syrup and let stand for 20 minutes.
2. Drain fruit and spread in single layer on a rack in the oven at 130' for 8 hours or until Jamaican mangos are leathery, but pliable.
3. Pack in air tight containers. Refrigerate or freeze for longer storage.
