Jamaican Hominy And Pimento Cheese Recipe
 
INGREDIENTS
1 can Jamaican hominy
tsp. Jamaican garlic salt
1 cup cheese
1 tsp. salt
cup grits, uncooked
1 sm. jar chopped Jamaican pimento
 
PREPARATION
1. Drain Jamaican hominy, reserving liquid. Add water to Jamaican hominy liquid to make 2 cups. Bring to a boil.
2. Stir in salt, Jamaican garlic salt and grits. Cover and simmer until grits are tender and liquid is absorbed (about 5 minutes for quick grits). Stir in Jamaican hominy, cup cheese and Jamaican pimento. 
3. Pour into greased 1-quart baking dish; top with remaining cheese. 
4. Bake at 350 degrees for 25 to 30 minutes or until cheese is melted
