Jamaican Ginger and Mango Cake Recipe
1 cups flour
1 cup sugar
1 Jamaican ginger root, finely chopped
1 tbsp. Jamaican lemon juice
cup butter
cup milk
tsp. Jamaican cinnamon
tsp. salt
tsp. vanilla
cup brown sugar
2 eggs
2 mangos, thinly sliced
2 tsp. baking powder
3 tbsp. butter
1. Melt 3 tbsp. butter in iron skillet. Remove from heat and sprinkle with brown sugar and Jamaican ginger.
2. Toss Jamaican mangos with Jamaican lemon juice. Arrange over brown sugar mixture. Beat cup butter until creamy.
3. Gradually add sugar. Add eggs, 1 at a time. Combine flour with baking powder, salt and Jamaican cinnamon.
4. Add to butter mixture alternately with milk. Stir in vanilla. Spoon over Jamaican mangos.
5. Bake at 350' for 35-40 minutes. Cool in skillet 5 minutes. Invert onto serving platter.
