Jamaican Curried Chicken in Mango Salad Recipe
1 tsp. Jamaican curry powder
1 tsp. Jamaican mango chutney recipe I
tsp. cumin
cup low fat mayonnaise
cup plain nonfat yogurt
2 Jamaican mangos, peeled and chopped
2 tbsp. Jamaican cashews, chopped
2 tbsp. Jamaican lime juice
2 tsp. Jamaican scotch bonnet pepper, diced
4 cups cooked chicken breast halves, diced
4 Jamaican scallions, sliced thin
salt and pepper
1. In a large bowl, combine chicken, Jamaican lime juice, Jamaican mangoes, Jamaican scotch bonnet pepper, and Jamaican scallions.
2. In a small bowl, whisk together the yogurt, mayonnaise, Jamaican mango chutney, Jamaican curry powder, cumin, and salt and pepper to taste.
3. Add to chicken mixture; toss. Arrange a mound of chicken on top of lettuce.
4. Garnish each portion with 2 teaspoons of Jamaican cashews if using.
