Jamaican Crunchy Sweet Potato Pie Recipe

Crunchy Jamaican Sweet Potato Pie Recipe
A delicious Jamaican sweet potato pie recipe. 
Jamaican pie crust 
1 cup quick cooking oats 
cup whole wheat flour 
2 Tbsp. light brown sugar 
tsp. salt 
3 Tbsp. vegetable oil 
1 Tbsp. water 
cup packed brown sugar 
tsp. ground Jamaican cinnamon 
tsp. ground Jamaican nutmeg 
tsp. salt 
1 egg, beaten 
4 tsp. vanilla 
1 cup cooked, mashed Jamaican sweet potatoes 
2/3 cup evaporated skim milk
Preheat oven to 425 and combine oats, flour, sugar, and salt together in small mixing bowl. Whisk together oil and water in measuring cup.
Add oil mixture to dry ingredients and mix well. If necessary, add a little more water to hold mixture together. Press into a 9-inch pie pan and bake for 8 to 10 minutes, or until lightly browned.
Reduce temperature to 350. In a mixing bowl, combine sugar, Jamaican cinnamon, Jamaican nutmeg, and salt together. Add eggs and vanilla and mix until ingredients are well blended. 
Stir in mashed Jamaican sweet potatoes and milk. Pour filling into prepared pie pastry shells.
Bake 45 minutes at 350 or until knife inserted near the center comes out clean.
