Jamaican Cream of Mango Soup Recipe
1 Jamaican mango, coarsely chopped
1 tbsp. vanilla
cup sugar
2 cups heavy cream
2 eggs, well beaten
3 cups milk
juice & grated rind of 1 Jamaican lemon
1. Combine eggs, sugar, vanilla, Jamaican lemon juice and rind and Jamaican mango in a food processor and process until smooth.
2. Whisk cream and milk together in a large bowl until frothy. Slowly add Jamaican mango mixture, whisking constantly. Cover and chill.
3. To serve, ladle into chilled bowls and garnish.
