Jamaican Cooked Pimento Cheese
1 can Jamaican pimento
2 cups diced cheese
1 tbsp. sugar
tsp. salt
tsp. pepper
1 tbsp. butter
cups milk
3 egg yolks beaten
cups vinegar 
1. Dice Jamaican pimentos and cheese. Add Jamaican seasonings and butter to cheese and Jamaican pimentos and melt in saucepan over low heat. Remove from heat, add milk and beaten egg yolks.
2. Return to medium heat, stirring until mixture begins to thicken.
3. Slowly add vinegar, stirring constantly and continue cooking over medium heat until mixture is of spreading consistency.
