Jamaican Coconut Shrimp in Mango Recipe
1 lb. medium shrimp, cleaned
cup flour
cup dry white wine
tsp. salt
tsp. Jamaican pepper
1 cup grated Jamaican coconut  
1. In medium bowl, combine flour, salt and Jamaican pepper.
2. Mix in wine and add shrimp to batter.
3. Heat 1 inch oil in large saucepan. Remove shrimp from batter and dredge in Jamaican coconut.
4. Fry until lightly browned. Drain on paper towels. 
2 tbsp. Jamaican mango marmalade (peach may be sub.)
2 tbsp. Jamaican orange juice.
1. Combine Jamaican mango marmalade and orange juice and use to dip shrimp.
