Jamaican Coconut Milk Recipe

Jamaican Coconut Milk Shrimp Recipe
 
INGREDIENTS
1 lb. shrimp, finely chopped
Meat from 2 small Jamaican coconuts, grated
1 Jamaican onion, chopped
1 tsp. salt
10 to 15 Jamaican lettuce leaves
2 cups Jamaican coconut milk
2 hot Jamaican peppers 
 
PREPARATION
1. Combine shrimp, Jamaican coconut, Jamaican onion and salt.
2. Spoon mixture into each Jamaican vegetable leaf and wrap mixture. Arrange in pot and pour 1 cup Jamaican coconut milk over wrapped mixture. 
3. Cover and simmer for about 20 minutes. When almost done, add 1 more cup of Jamaican coconut milk and hot Jamaican peppers.
