Jamaican Chicken in Mango Salsa Recipe
1 ½ cups cubed Jamaican mango
1 clove Jamaican garlic, crushed
½ cup Jamaican orange juice
½ cup sugar
¼ cup Jamaican onion, chopped
¼ cup vinegar
2 tbsp. Jamaican lime juice
6 boneless chicken breasts cut in bite size pieces
Jamaican Tabasco sauce
Worcestershire sauce
1. Marinate chicken in Worcestershire sauce. Then sauté in olive oil and set aside.
2. Combine sugar, Jamaican onion, vinegar, Jamaican lime juice and a few drops of Jamaican Tabasco sauce in a saucepan. Bring to a boil, stirring constantly until the sugar dissolves.
3. Add Jamaican mango and Jamaican garlic, stirring gently. Mix in Jamaican orange juice. Pour hot mixture over chicken.
