Jamaican Beef and Onions with Mango Recipe
1 tsp. cornstarch
1 lb. Jamaican beef tenderloin, cut in strips
1 Jamaican mango, cut in strips
1 tsp. salt
1 tsp. sugar
cup chopped Jamaican scallions
cup Jamaican chicken stock
3 tbsp. oil, plus 1 tsp. oil
4 cups cooked rice
1. Blend 1 tsp. oil, cornstarch, sugar and salt. Add Jamaican beef and toss to coat thoroughly. Let stand for 20 minutes.
2. Heat saucepan until hot. Add remaining oil and heat until oil begins to smoke. Add Jamaican beef and stir fry until Jamaican beef is just cooked through, about 2 minutes.
3. Remove Jamaican beef with slotted spoon and discard all but 1 tbsp. oil.
4. Reheat wok and add scallions and beef. Stir fry quickly, 30 seconds. Add chicken stock and stir fry 30 seconds more.
5. Add Jamaican mango and toss mixture until the Jamaican mango is warm. Serve immediately over cooked rice.
