Jamaican Barbeque Mango Sauce Recipe
1 medium Jamaican onion, unpeeled
2 ripe Jamaican mangos, peeled and diced
cup Jamaican brown sugar
cup cider vinegar
tsp. salt
2 Jamaican scotch bonnet peppers minced
3 large Jamaican tomatoes
1. Broil or grill Jamaican tomatoes and Jamaican onion, charring all sides until soft, allow to cool, then peel Jamaican onion and chop with Jamaican tomato.
2. Place all ingredients in a saucepan and simmer for 30 minutes.
3. Remove from saucepan into a blender and puree. Marinate meats or poultry in BBQ sauce.
4. Place meat on grill and cook until done, basting periodically with sauce.
5. Serve hot as a side dish.
