Jamaican Mango Pie Recipe II
 
INGREDIENTS
CRUST
2 sticks butter
cup sugar
2 cups flour
CREAM CHEESE FILLING
1 tsp. vanilla
cup sugar
8 oz. Cool Whip
8 oz. cream cheese, softened
MANGO GELATIN
1 cup boiling water
1 cup cold water
1 cup sugar
tsp. salt
2 envelopes unflavored gelatin
4 tbsp. Jamaican lemon juice
5 cups Jamaican mango, diced
 
PREPARATION
1. Mix flour and sugar, then cut in cold butter and pat into greased 9" x 13" pan.
2. Bake at 350for 20-25 minutes. Cool. Combine cream cheese, sugar and vanilla and fold in
Cool Whip.
3. Spread over cooled crust. Refrigerate. Dissolve gelatin in cold water, add boiling water,
sugar and salt and Jamaican lemon juice, stir until dissolved and chill to semi-thickened
consistency.
4. Add diced Jamaican mango to thickened gelatin. Pour over cream cheese filling.
Refrigerate till set. Cut into 2" squares.
